Description
An ancestral breeze sways the vineyards of Jacques Lassaigne Le Grain de Beauté Les Paulets, that small butte dominated by deep chalk soils in Montgueux, where Emmanuel Lassaigne, after listening to the legacy of his father Jacques, decided - with silent courage - to replant there. Between white stone trenches, Chardonnay vines, over 65 years old, nurture this microcosm of authenticity. The plan was born as an act of romantic rebellion: to rescue an almost forgotten plot, to plant vines in balance with the ecosystem and to produce a pure, vibrant and uncompromising Blanc de Blancs. The interpretation of the terroir - fragile, tense, mineral - is conjured up in a single plot, Les Paulets, whose limestone silhouette filters a different music with each vintage.
Winemaking
The grapes are selected and harvested by hand, and as soon as they reach the press they are gently crushed without tearing. Malolactic fermentation is completed in barrels - unhurried, without additives - which age the must for four years, refining its nerve and giving it texture. After this prolonged contact with the wood -always used, so as not to disguise, only to add complexity-, the wine rests in the bottle for 2-3 years before disgorging by hand.
Taste
To open Jacques Lassaigne Le Grain de Beauté Les Paulets is to expose oneself to its robust elegance. The nose opens up to a sparkling perfume: ripe pear and pale peach, barely touched by light floral nuances suggesting tamed petals, nothing cloying, only hinted at. On the palate, the attack is lively, a sparkling spark that bursts with chalky rumination, salinity and an acidity that sharpens the palate. The minerality dilates, as if the wine has absorbed centuries of limestone, and leaves a green apple aftertaste that finishes with precision, without ornamentation.
Jacques Lassaigne Le Grain de Beauté Les Paulets does not shout, but makes itself heard with that "oomph" that stirs the taster's vocabulary. Vibrant, chiselled, pure and layered: the kind of wine that makes you rethink your senses. Firm texture, layers that unfold like gales in chalk.
