Description
For generations, Emmanuel Lassaigne has championed a vision of Champagne that is deeply rooted in the land and authenticity. His project at Jacques Lassaigne Clos Sainte-Sophie, a small walled plot of land in Montgueux, was born of a radical decision: to vinify on a plot-by-plot basis and without concessions. While many seek broad assemblages, he opted for the uniqueness of this century-old clos, where the old Chardonnay vines sink their roots into Cretaceous chalk soils, facing east, capturing the morning light and freshness. An anecdote defines his philosophy: in the early days, Emmanuel decided not to add sugar to the expedition liqueur, even when industry experts told him that "no one would sell such an austere Brut Nature ". Today, this purity is his signature.
Winemaking
Jacques Lassaigne Clos Sainte-Sophie is harvested by hand at the optimum moment of ripeness. Fermentation starts spontaneously in old oak barrels, with indigenous yeasts, without temperature control, respecting the expression of the terroir. Ageing on the lees lasts between 6 and 8 months in barrels, and then the wine is transferred to the bottle, where it rests for 5 to 6 years before disgorging. No expedition liqueur is added: Jacques Lassaigne Clos Sainte-Sophie is Brut Nature by conviction. Disgorging is carried out by hand, without correction or dosage, preserving the wine's energy intact.
Taste
In the glass, Jacques Lassaigne Clos Sainte-Sophie has fine, elegant bubbles. On the nose, it displays a refined profile: tense citrus fruits, lemon peel, green apple, on a mineral, chalky, almost saline background. There are also subtle notes of white flowers, very delicate brioche and a faint smoky echo, reminiscent of gunpowder. The palate is linear, with a vibrant, precise acidity that cuts through with clarity, giving way to a creamy, perfectly balanced texture. The palate is agile but deep, and the finish is long, with a lingering memory of wet chalk and dried lemon. There are no fruity concessions here: this is a Champagne of purity, of verticality, of soil. For those who seek emotion in tension, and truth in simplicity. Ideal with oysters, sashimi or highly saline dishes, but also for solitary contemplation, glass in hand, letting the terroir speak.
