High in the hills of Château Chalon, in the heart of the Jura, lies the Berthet Bondet domaine, a wine-growing jewel that has been authentically reborn to become a benchmark. Founded in 1984 by Jean and Chantal Berthet Bondet, who acquired an estate that had been abandoned for half a century and started a new chapter in winemaking from scratch.
A tradition born of courage
Without a family winemaking tradition, but with agronomic training and a passion for the land, Jean and Chantal embarked on this adventure. Jean had worked at Domaine Macle, which strengthened his connection with this unique terroir. They started with 3 hectares and today farm 15 hectares, divided between the renowned AOC Château Chalon and the AOC Côtes du Jura.
The Jura as a canvas
On limestone, marl and slate soils, the Savagnin reaches a deep expression. Wines with character and finesse are born here. They have been practising organic viticulture since 1993 and have been certified since 2010. They work with minimal intervention, plant cover and absolute respect for the ecosystem.
Oak, veil and savoir-faire
The Savagnin destined for Château Chalon is aged under the "veil of flor", that layer of yeast that brings notes of walnut, spices and depth. These are long-ageing wines, intense but ethereal. They also make ouillés whites, i.e. protected from oxidation, and light reds such as their "Trio" cuvée of Trousseau, Poulsard and Pinot Noir, which reveal a modern take on the Jura.
Berthet Bondet' s wines stand out for their balance, precision and ability to reflect their origin. Like a mirror of Jean's character, they convey serenity and elegance. The whites show minerality and tension; the Château Chalon, an aromatic universe of dried fruits and spices, wrapped in millimetric elegance.
Evolving heritage
Since 2017, his daughter Hélène Berthet Bondet has been running the domaine, strengthening organic viticulture and perfecting every detail without losing the artisanal essence. Today, the name Berthet-Bondet is synonymous with Jurassian identity, respected tradition and a vision for the future.
