The 2017 Château Chalon comes from the first year of the recent frost years that occur every two or three years now (2019, 2021, 2024), which is different from the past, when it was every 30 years. After the frost, the rest of the season was beautiful and perfect (unlike the other years of frost). The wine has a pungent and incisive nose, with notes of peat, iodine, nuts and morel mushrooms. It has piercing flavors, very intense, long, tasty and complex, even for such a young age. It comes in at 15.5% alcohol. This has to be one of their finest vintages of Château Chalon. They produced 10,000 bottles of this fantastic wine. I also tasted a bottle of 1997, and it was singing. I think the 2017 is going to be superb with time.

Description

The Berthet Bondet winery, located on the historic Château Chalon plateau, embodies a philosophy based on absolute respect for the terroir and the Jura tradition. From the very beginning, this family decided to work their vineyards under organic farming, taking care of the soils by intercalated plant cover and manual tillage, without the use of chemical products. Berthet Bondet Château Chalon is made exclusively from Savagnin grapes, the emblematic grape variety of the Jura, grown on marl soils of the lees, which provide a marked minerality and a very characteristic structural tension. With a cool climate of contrasting temperatures and morning mists, ripening is slow and balanced, ideal for expressing the pure character of the Château Chalon appellation. The Berthet Bondet's most courageous decision was to go for an uncompromising style: long oxidative ageing under veil, traditional winemaking, and an approach that honours history without losing contemporary precision.

Winemaking

After manual harvesting, the clusters destined for Berthet Bondet Château Chalon enter the press whole, without destemming, in order to preserve the identity of the fruit. Fermentation takes place in stainless steel tanks, without additives and at a controlled temperature. Once fermentation is complete, the wine is transferred to 228-litre oak barrels, where it rests for a minimum of six years under a veil of yeasts, without refilling the barrel (without ouillage). This slow oxidative method allows the wine to develop a unique aromatic complexity, as well as giving texture and depth without losing freshness. The wine is bottled without aggressive filtration, with a cellaring capacity that can easily exceed 50 years.

Taste

Deep golden in colour, Berthet Bondet Château Chalon offers a symphony of nuts, mild curry, dried citrus and limestone on the nose. Ageing under the veil brings notes of yeast, exotic spices and dried camomile. The palate is firm and vibrant, with sharp acidity supporting flavours of dried fruit, lemon rind, salinity and fine bitterness. The finish is long, with echoes of old wood, light smoke and bitter almond. Ideal with comté, morel or spicy dishes, it is a wine for curious palates, lovers of the singular and the liquid history of the Jura.
