Description

The dawn's dawn is timidly settling on the Jura moors when, on a small plot of land in Arbois, the idea of Les Lumachelles is born. The family behind Domaine des Cavarodes felt a unique vibration in the chalky, chalky soils of the Jura: an intimate name whispered by the terroir that refers to the first steps on the "lumachelles", wrinkles and furrows that the wind has chiselled into the earth. This daring inspiration prompted a commitment to the Trousseau variety, indigenous and brittle, an ally of freshness. Harvested by hand in an early vintage, it palpates the mineral character of the vineyard and embraces the tradition of the Jura while conjugating a modern voice. An anecdote lives on: Étienne Thiebaud, decided to vinify a small batch in local clay amphorae as a test of a new language.

Winemaking

The Trousseau grapes from which Cavarodes Arbois Trousseau Les Lumachelles is made arrive delicately at the winery and first rest for a few hours in neutral oak vats, allowing the veil-thin skins to release colour and aromas with their lightness. The fermentation, spontaneous in 228-litre vats, is driven by its own slow, unhurried yeasts. When winter arrives, part of the wine is transferred to amphorae, where it will rest for six months in fine contact with its lees, learning smoothness without losing salinity, with the ancestral gesture in harmonious dialogue with the wood. Afterwards, it is returned to the foudre for an additional nine months of ageing, where the natural acidity and structure build bridges to the future. Finally, the wine is lightly filtered - no raw filtering - and bottled with respect, without excessive fining, taking care to preserve the depth and openness of the soil.

Taste

The first sip of Cavarodes Arbois Trousseau Les Lumachelles opens a window onto the cool gloom of the Jura forests. It is a wine that speaks softly, not with fanfare, but with restrained intensity. An explosion of somewhat wild red fruits - subtle cherry, bright raspberry, barely hinted at - is interwoven with fine notes of damp mushrooms, wild game, an icy elegance that drags down the memory of ferns and leaf litter.

There is also a hint of cool spice - smoky red pepper, a pinch of graphite in the background - that sustains the whole without imposing itself. The retronasal is long, leaning towards minerals and rocky pebbles, but also with hints of dried quince and old tile, a texture that invites you to savour slowly as it dances with creamy cheese or sautéed mushrooms.
