The 2022 Xarel.lo Pairal comes from the oldest plot of Xarel.lo they have, almost centenary, vinified in 425-liter chestnut barrels, stainless steel tanks and glass demijohns and kept with the lees for five months. This always has a different spicy twist, I guess from the chestnut wood they use that gives it a sweet and somehow rustic touch. It has contained ripeness for the natural conditions of the year that made it achieve 13.13% alcohol while keeping the freshness through a pH of 3.17. The mouthfeel is tender and round, with polished chalkiness and a sapid twist in the finish. 2,000 bottles produced. It was bottled in April 2024.
