Description
Pascal Cotat, one of the most recognised names in the Sancerre appellation, makes unique wines from Sauvignon Blanc grapes. Hailing from Chavignol, his 2.3 hectare vineyard is located on the steep slopes of the Monts Damnés mountain . The predominant soils in this plot are chalky and clayey, similar to those found in Chablis, which gives the wines a marked minerality and vibrant acidity. The cultivation method is integrated, with minimal intervention, which reinforces the pure character of the wines.
Winemaking
In winemaking, Pascal Cotat harvests the grapes by hand and presses them in whole cluster. Fermentation is carried out with indigenous yeasts in large barrels (demi-muids) that have been used previously, which allows the freshness and purity of the wine to be maintained. The wine is aged for over a year in these barrels before bottling without being filtered or clarified, thus maintaining its natural integrity.
Taste
Pascal Cotat Les Monts Damnes is characterised by a rich and complex combination of flavours. On the nose, aromas of white fruits such as melon stand out, accompanied by subtle notes of fresh herbs and white flowers. On the palate, the wine is creamy but light, with a sharp minerality and a touch of salinity that makes it unique. Fruit flavours of pear and grapefruit, along with a hint of lemon zest, add freshness and surprising longevity on the palate.
This wine is ideal to accompany rich seafood, white meats or cured cheeses, thanks to its structure and balance between acidity and texture.
