In Volnay, south of Beaune and a stone's throw from Pommard, Burgundy becomes a whisper: hillsides with clear light, fresh air and that mix of marl and limestone that forces the Pinot Noir to speak softly, with precision. Here, Maison Drouhin has been pursuing an almost obstinate idea for generations: not to "make" a wine, but to let the terroir explain itself. This philosophy feels particularly courageous in times of make-up: manual harvesting in small open crates, rigour without fuss and decisions made in the cellar not by calendar, but by tasting. There is a scene that portrays its character well: if a lot asks for more time in wood or more calm before blending, it is granted, even if the market is in a hurry. Volnay, with its tradition of fine, perfumed wines, finds in this house an interpreter who prioritises elegance over volume.

Winemaking

At Joseph Drouhin Volnay, the grapes come in whole and fresh, harvested by hand, and are completely destemmed to refine the line. Fermentation and maceration last 2 to 3 weeks in small open vats; the work is artisanal, with punching down and pumping over adjusted to the response of the must and skins. Fermentation is carried out with indigenous yeasts, preserving the character of the vineyard and the terroir, and pressing is done in a vertical press, separating fractions to preserve purity. Ageing takes 12 to 16 months in French oak barrels, with 20% new oak: here the wood does not perfume, it structures.

Taste

In the glass, Joseph Drouhin Volnay is bright and lively. The nose opens with violet and a clear black fruit, cassis-like, more insinuated than declarative: it is not a wine of shouts, it is a wine of nuances. The palate enters silky, velvety to the touch, but a fresh undercurrent soon appears, tightening the centre and lengthening the finish. The fruit moves between dark cherry and redcurrant, wrapped in fine spices; the tannins are small-grained, polished, more "silk" than "sandpaper". The whole is ample without being heavy, elegant without being fragile, with a long aftertaste with echoes of candied fruit and very measured vanilla. With air and some time in the bottle, it promises that Burgundian twist towards notes of noble earth and mushrooms, without losing its line: Joseph Drouhin Volnay in its pure state, refined and persistently delicate.
