Description
Since the late 19th century, the family behind Maison Joseph Drouhin has understood that greatness in Burgundy is not built on strength, but on precision. When they decided to make a determined commitment to Chablis and acquire their own vineyards in Vaudon, they did so convinced that the cold, chalky north could offer one of the purest expressions of Chardonnay. Here there are no concessions to fashion or the search for volume: there is Kimmeridgian soil full of marine fossils, a harsh continental climate with risky springs and bright summers, and a viticulture that is close to organic and respects the natural rhythm of the vine. Joseph Drouhin Chablis is 100% Chardonnay, yet it tastes more of stone than of fruit. That is its declaration of intent.
Winemaking
Joseph Drouhin Chablis is made with extreme care to preserve the natural freshness of the grapes. After gentle pressing, the must ferments in stainless steel tanks at a controlled temperature. No overpowering oak, no aromatic artifice: the aim is to capture the rectilinear energy of the vineyard. Ageing on fine lees for several months provides a subtle, almost imperceptible texture that balances the sharp acidity without detracting from its tension. The wine is bottled when the minerality vibrates clearly and the structure is perfectly defined. Every decision here seeks purity, not opulence, in this authentic Chablis white wine.
Taste
On the nose Joseph Drouhin Chablis is restrained, almost reserved at first. A whiff of fine reduction dissipates and gives way to fresh lemon, lime zest and crisp green apple. All wrapped up in a distinct sense of wet chalk and bruised stone. It's not a tropical fruit fest; it's a mineral, elegant Chablis, a wine for purists.
The palate comes in like an arrow. The acidity is firm, cutting, awakens the palate and refines it. Straight citrus, marked salinity, a touch of green pear and a long, dry, stony finish.
