Description
Faiveley Gevrey Chambertin Vieilles Vignes is a jewel in Burgundy's rich winemaking tradition, made by Domaine Faiveley, a winery with a history dating back to 1825 and still a family legacy. This wine is an exponent of Gevrey-Chambertin authenticity, coming from vineyards with vines over 35 years old, planted on an area of almost 10 hectares. The chalky and clay soils, characteristic of the region, allow the roots of the old vines to penetrate deeply, resulting in wines of remarkable complexity and character.
Winemaking
The winemaking of Faiveley Gevrey Chambertin Vieilles Vignes follows a careful process that includes a manual harvest and a meticulous selection of the grapes. Depending on the vintage, a variable proportion of whole bunches and destemmed grapes are used. The maceration process lasts 19 days, ensuring optimal extraction of tannins and aromas. The wine is then gently pressed and aged for 14 months in French oak barrels, 20-30% of which is new, providing subtlety and structure. Finally, the wine rests for 2 months in vats before bottling.
