Description
Domaine Faiveley has been a benchmark in the Burgundy region since 1825, standing out for its dedication and commitment to winemaking excellence. Faiveley Nuits Saint Georges isa tribute to the rich tradition of the Côte de Nuits, where the vineyards have more than a millennium of history. This wine, made from 100% of the noble Pinot Noir variety, is grown in east-facing vineyards on clay and limestone soils, characteristics that give it its uniqueness and expression.
Winemaking
Faiveley's winemaking methods combine respect for tradition and modern techniques. The grapes are harvested and selected by hand, and depending on the vintage, the proportion of destemmed and whole bunches varies. The process includes daily pumping over to extract colour and tannins, followed by a 19-day maceration. The wine is then racked by gravity, and the pomace is gently pressed to obtain a pure must. Ageing takes place for 14 months in French oak barrels, 20-30% of which are new, selected for their fine grain and moderate toast. Finally, the wine matures for two months in tanks before bottling, guaranteeing its balance and potential.
Taste
Faiveley Nuits Saint Georges seduces with its intense garnet red colour. On the nose, aromas of ripe red fruit, oak and spices unfold, anticipating a complex experience. On the palate, the entry is rich and silky, marked by well-integrated tannins and a balance that envelops the palate. Notes of cherry, raspberry and hints of earth and smoke add depth and elegance. The wine's structure is firm, but its lingering, delicate finish invites another glass. Perfect with dishes such as duck breast with grape sauce or venison fillets, served at an ideal temperature of 14-16°C.
