Description

Champagne Billecart-Salmon Louis Salmon Brut Blanc de Blancs is a prestigious cuvée, made exclusively from Chardonnay grapes from the best vineyards of the Côte des Blancs, an area renowned for the high quality of its Grand Cru vineyards . The wine is made in homage to Louis Salmon, brother of Elisabeth Salmon and one of the co-founders of the Maison.
The wine's composition comes from vineyards located in the best parcels of Chouilly (40%), which provides finesse, Cramant (33%), which provides elegance, Mesnil-sur-Oger (20%), which adds structure and longevity, and Avize (7%), known for its power. These plots have predominantly chalky and chalky soils, which gives the wine a strong minerality and freshness.

Winemaking

Vinification includes a process in which 25% of the must is fermented in oak barrels, which adds complexity and structure to the wine. Ageing is a key factor in this Blanc de Blancs, with prolonged maturation on the lees in the cellar for 115 months (more than 9 years), which ensures a slow and deep evolution of aromas and flavours. The wine is dosed at a low level of only 3.9 g/L, which allows it to retain its purity and freshness, resulting in an extra brut champagne with a perfect balance between acidity and elegance.

Taste

Billecart-Salmon Louis Salmon Brut Blanc de Blancs has a creamy character and great finesse. On the nose, elegant and complex aromas of citrus fruits such as limoncello and candied mandarin, as well as notes of fresh butter and cedar, characteristic of its vinification in oak. As the wine aerates, subtle aromas of yellow fruits such as conference pear emerge, which integrate perfectly with the mineral character of the wine.
On the palate, the wine offers a creamy texture with refreshing flavours of cider, almond biscuit and white pepper. Its natural balance, enhanced by the low dosage, makes for a majestic wine that finishes with surprising aromatic persistence. The long finish evokes notes of cardamom, vanilla and biscuit, giving it exceptional depth.
Billecart-Salmon Louis Salmon Brut Blanc de Blancs is ideal to be enjoyed at a serving temperature of between 10 and 12°C, pairing perfectly with sophisticated dishes such as seafood risottos, grilled scallops or veal sweetbreads.
