Disgorged at the end of 2019 with a dosage of one gram per liter, Billecart-Salmon’s 2005 Brut Le Clos Saint-Hilaire is the eighth edition (the release sequence is 1995, 1996, 1998, 1999, 2002, 2003, 2006 and 2005; Mathieu Roland-Billecart released this vintage after the 2006, to give it more time to mature in bottle.) This 100% Pinot Noir from the single vineyard in Mareuil-sur-Aÿ has a bright, vibrant, fresh nose of orchard fruits, dried fruits, nuts, pastry and spices. The palate is tense, delicate and medium-bodied and evokes notes of white pepper and chalk with a saline finish and a gently bitter aftertaste due to the vintage. It's a little more austere than the 2006 vintage but precise and crystalline.

Description
Billecart Salmon Clos Saint Hilaire is the purest expression of the spirit of a great family Champagne house. Since 1818, the Billecart family has cultivated a philosophy based on precision, patience and absolute respect for the terroir. In 1964, they set aside a one-hectare walled plot of land in Mareuil-sur-Aÿ to devote exclusively to Pinot Noir, convinced that this small vineyard could give life to a prestigious Champagne with an unrepeatable identity. They took a bold gamble: a single-varietal clos in the land of blending. On deep chalk and marl, an intense, mineral and extraordinarily long-lived blanc de noirs is born, made only in exceptional vintages.
Winemaking
At Billecart Salmon Clos Saint Hilaire, the grapes are harvested by hand and rigorously selective. Vinification is 100% in oak barrels, providing structure and depth through precise micro-oxygenation that refines the texture without masking the purity of the fruit. After fermentation, the wine remains 177 months on the lees in the cellar, an exceptional time that builds complexity, integration and a very fine bubble. Disgorgement is carried out at a dosage of 1.9 g/l, placing it in an almost Extra Brut profile. This minimal dosage preserves the natural tension and chalky character that defines Billecart Salmon Clos Saint Hilaire as a very limited production millésimé Champagne.
Taste
Billecart-Salmon Clos Saint Hilaire is reserved and aristocratic on the nose. With an air of toasted brioche, malted cereal and hazelnut, followed by baked apple, quince and a subtle hint of red plum. All enveloped in a wet chalky imprint that speaks clearly of its origin.
The palate is full but taut. The acidity is vibrant and precise, supporting a creamy yet firm texture. Notes of toasted almond, candied orange peel and a delicate smoky echo emerge. The finish is long, saline and vertical, with a mineral persistence that leaves a dry and profoundly elegant sensation. A powerful and refined vintage Champagne that combines energy, nobility and extraordinary depth.
