Aromas of rose, peony, red berries and guava preface the NV Brut Rosé, a medium to full-bodied, elegant and vinous Champagne rosé that concludes with a long, ethereal finish enhanced by menthol notes. A blend of 45% Chardonnay, 35% Pinot Noir and 20% Pinot Meunier, it's based on the 2014 vintage with 46% vins de réserve from nine different vintages and the addition of 6% as a red wine, vinified and matured in stainless steel. Dosage; 4.7 grams per liter.

Description
Since 1818, the family-run Billecart has cultivated a philosophy based on precision and quiet elegance. Billecart-Salmon Le Rosé was born in Mareuil-sur-Aÿ, on chalky soils that impart tension and salinity, as a firm commitment to subtlety at a time when rosé did not yet enjoy the prestige it enjoys today. The family decided to maintain a delicate and consistent profile, without giving in to passing fashions for more colour or exuberance. This iconic rosé Champagne combines 40% Chardonnay from various crus of the Marne, 30% Pinot Noir from the Montagne de Reims and the Grand Vallée du Marne, and 30% Meunier from the Vallée du Marne and the southern slopes of Épernay. The cool climate of the region brings nerve and longevity; the tradition, a know-how handed down over seven generations.
Winemaking
The vinification of Billecart-Salmon Le Rosé is carried out entirely in stainless steel vats to preserve purity and aromatic definition. Each variety and parcel is worked separately before final blending. Malolactic fermentation is carried out, refining the acidity and providing a silky texture without losing freshness. A 40% reserve wine gives depth and stylistic continuity. The 9 g/l dosage is precisely calibrated, providing balance without masking the wine's natural tension. After the second fermentation in the bottle, Billecart-Salmon Le Rosé matures 36 months on the lees in the cellar, developing complexity, creaminess and an extremely fine bubble, the hallmark of this Champagne Brut Rosé.
Taste
In the glass, Billecart Salmon Le Rosé is a pale pink with coppery reflections, bright and delicate. The nose is precise and elegant: fresh raspberry, wild strawberry and a subtle nuance of red cherry, accompanied by citrus peel and a slight hint of brioche and almond. On the palate, the bubbles are creamy and very fine, enveloping crisp red fruit supported by perfectly integrated acidity. The dosage acts as a thread that balances without sweetening. A chalky mineral background adds verticality and lengthens the finish, leaving echoes of redcurrant and blood orange with a slight salinity.
