Description
In Swartland (South Africa), where the sun is hot and the Atlantic wind cools the pulse of the afternoons, Adi Badenhorst soon understood that memorable wines are not born from "recipes", but from extreme places. Badenhorst Klip Kop Steen Chenin Blanc is just that: the decision -almost obstinate- to bottle a Chenin Blanc that does not seek to please everyone, but to translate a tiny spot on a granite hill. The vineyard, 0.6 ha planted in 1978, clings to a rugged, exposed outcrop; "Klip Kop" means "Rock Head", and the name is not poetry: it is the granite rocks that dominate the site. The yield is tiny, around 1200 L of must, because here nature Mandó and scarcity is a consequence, not a strategy.
Winemaking
At Badenhorst Klip Kop Steen Chenin Blanc, the grapes are harvested by hand, put into small crates and cooled overnight to preserve tension and precision. It is then pressed whole bunch, without destemming, in search of structure and that noble bitterness that becomes the backbone of Chenin Blanc white wine. The must falls by gravity directly into a very old 1200 litre foudre: large, worn wood, without aromatic make-up. Fermentation starts on its own, with indigenous yeasts, and can take months to complete. Afterwards, the wine remains on thick lees during the whole ageing process, gaining texture and depth without losing its mineral nerve. It is bottled without fining or filtering: a gesture consistent with the philosophy of minimum intervention.
Taste
Badenhorst Klip Kop Steen Chenin Blanc is not a "nice fruity" mineral white wine. On opening, it can show a fine reduction (dull match, flint), which with air reveals crushed stone, lemon peel, quince and firm pear. The palate enters taut and straight, with precise acidity that sharpens the tongue; ageing on the lees provides a waxy texture that supports the whole. Discreet salinity, bitter citrus, dried herbs and a very long mineral persistence, like chewing wet granite. Dry, serious and addictive: more energy than volume, more rock than perfume; a Swartland Chenin Blanc for lovers of tension, purity and gastronomy.
