The other new red is the 2014 Caíño Amaral from young vines first vinified in this vintage. The modus operandi is similar; native fermentation with full clusters and aging in French barrique for 18 months. I simply loved the aromatics of this wine, its elegant rusticity, the spicy and floral aromas—very expressive and harmonious. It makes you salivate with the effervescent minerality. It's light on its feet and intense at the same time. This feels very different from the Caíño from Rías Baixas, reflecting different soils and climate. Superb! 1,200 bottles.
Between 16ºC and 18ºC
Fermented with indigenous yeasts with whole harvest and stems. Aged for 18 months in French oak barrels.
