Description
Vigne au Daim is an exquisite wine distinguished by its unique winemaking process and rich varietal composition. This wine is a single varietal, made exclusively from Chardonnay grapes from vineyards located in the village of Gizia, Jura. These vineyards, more than 45 years old, are located on soils of grey marl and crumbling slate, conditions that bring a unique complexity to the grapes.
Winemaking
The winemaking of Vigne au Daim follows a meticulous process: after a slow, direct press, the must ferments and matures for 24 months in barrels of different sizes, all of which are of a certain age, which contributes to the wine's unique profile without overloading it with woody notes.
The barrel ageing gives Vigne au Daim remarkable structure and complexity, while the 450-metre altitude of the vineyards and the cool nights of the region enhance the wine's acidity and length. This dynamism is amplified by the saline minerals typical of the slate present, a testament to the rich biodiversity of the area, including the frequent presence of deer that give the wine its name.
Taste
Vigne au Daim offers a fascinating taste experience. It is characterised by a light effervescence that gives way to a range of flavours where grapefruit stands out, accompanied by a subtle hint of oak. Its long finish and good acidity make it an exceptionally balanced and versatile wine, able to pair perfectly with a wide range of foods, from seafood such as squid and cuttlefish to meat such as lamb. This wine is not only recommended for its quality and complexity, but also for its ability to complement a diverse culinary experience, enhancing the flavours of the dishes with which it is paired.
