Description
In Montilla Moriles, where Pedro Ximénez is usually associated with sweetness and solera, Toro Albalá decided to strip it of all embellishment. Thus was born MIUT Santa Magdalena: the almost stubborn determination to prove that a dry PX can be serious, structured and mineral. The winery—with roots dating back to 1844 and the character of a house that has always known how to navigate between tradition and bold decisions—has created a single-vineyard white that does not seek to please everyone, but rather to tell the truth of the terroir. And that place is Moriles Altos, with its soils of calcareous-siliceous alberos and flaky tuff: light-coloured stone, intense light, and a climate that in 2021 was truly demanding—warm and very dry—forcing the harvest to be carried out with precision to preserve the wine’s vigour. There is only one variety, Pedro Ximénez, but the message is multifaceted: tension, salinity and texture.
Production
Toro Albalá Miut Santa Magdalena is underpinned by viticulture focused on balance and concentration: organic management, controlled yields and grapes harvested in August to lock in freshness. In the winery, the must ferments in a combination that defines the MIUT style: terracotta amphorae and French oak barrels. Then comes the key to its full-bodied yet lean character: 12 months on fine lees with bâtonnage, building the palate from within, without imparting woody aromas. Very limited production (2,450 bottles) and moderate alcohol content (12.5%): more scalpel than sledgehammer.
Taste
Toro Albalá Miut Santa Magdalena presents a brilliant golden colour. The nose opens with a subtle profile: hot stone, dry leaves and spices (curry, turmeric), with a background of nuts and a delicate brioche note, more textural than sweet. It is on the palate that it wins over purists: a dry, salty attack, straightforward in character, with a texture of damp chalk and an acidity that brings everything together. The finish is long and mineral, slightly spicy, leaving a sensation of cleanliness and hunger: grilled seafood, fish rice, Mediterranean cuisine without sauces. An uncompromising dry PX, austere and addictive.
