Description

At Toro Albalá, in the very heart of Montilla Moriles, the Pedro Ximénez grape has for centuries been associated with sweetness and the slow passage of time. With Toro Albalá Miut El Jabonero, the winery does exactly the opposite: a bold, almost provocative move to demonstrate that PX can also be dry, taut and serious. The idea was born in the Sierra de Montilla, in the Pago de Benavente, where old bush-trained vines survive, cultivated using organic methods, minimal tillage and an almost obsessive respect for natural balance. Here, the albarizas reign supreme: light-coloured limestone that reflects light, stores coolness and imparts to the wine an unmistakable mineral character. In a particularly demanding year, the decision was clear-cut: to harvest early to preserve vigour and purity, even if that meant sacrificing easy opulence.

Vinification

For Toro Albalá Miut El Jabonero, the grapes are brought into the winery quickly to protect aromas and acidity. Fermentation takes place in a mix of French oak barrels and terracotta amphorae, aiming for texture without masking the terroir’s identity. Then comes the fine work: ageing on lees with bâtonnage, to gain body and a creamy texture without losing its structure. Bottling is carried out with measured intervention: just enough to let the wine speak for itself.

Taste

Toro Albalá Miut El Jabonero appears in the glass as golden, luminous and precise. The nose does not shout: it whispers of citrus, quince and a hint of dried flowers, all wrapped in that note of warm stone and wet chalk that betrays the albariza soils. On the palate, it enters full-bodied and broad, but quickly stretches out: the acidity tenses it like a wire and the salinity gives it edge. There are hints of stone fruit and a suggestion of honey, always restrained, never heavy. The finish is long and chalky, with an elegant bitterness that cleanses the palate and calls for food: baked fish, seafood, Mediterranean cuisine. A Pedro Ximénez white for purists: dry, serious, tremendously gastronomic.
