Description
Rossignol Trapet was born from the union of two key Burgundy lineages: the Rossignols of Volnay and the Trapets of Gevrey Chambertin. When Nicolas and David Rossignol took over the domaine, they made a bold decision for their time: to transition the vineyard to biodynamic farming, not as a mere gesture, but out of deep conviction. The idea was both simple and radical: to intervene less so that the land could speak more clearly. Rossignol Trapet Gevrey Chambertin 1er Cru Aux Combottes, made from 100% Pinot Noir, comes from a unique climat at the southernmost tip of Gevrey, alongside some of the most prestigious names of the Côte de Nuits. The plot, situated at the mouth of a cool valley, combines a slope, good ventilation and a subsoil of limestone and clay covered with fine gravel. From this comes a wine that seeks not muscle, but tension, silkiness and precision.
Winemaking
The winemaking process for Rossignol Trapet Gevrey Chambertin 1er Cru Aux Combottes follows the same philosophy of respect and restraint. The grapes enter the winery following careful selection, first in the vineyard and then on the sorting table. Fermentation is carried out gently, aiming to extract more texture and nuance than power, with an increasingly delicate approach to pumping over and stirring. Everything is geared towards preserving the natural finesse of the Pinot Noir and the expression of the terroir. The wine is then transferred to French oak barrels for 16 months’ ageing, 20 per cent of which are new – enough to support the structure without imparting any toasty notes. The ageing process refines, lengthens and polishes the wine, but never masks its character.
Taste
In the glass, Rossignol Trapet Gevrey Chambertin 1er Cru Aux Combottes presents itself as a Gevrey Chambertin with a refined profile, where depth does not weigh it down and elegance is never merely decorative. The red fruit is crisp, with notes of cherry and raspberry, accompanied by delicate floral notes, subtle pepper and a very Burgundian earthy, chalky undertone. The attack is silky, almost enveloping, but the hillside character soon emerges: freshness, vigour, minerality, a tension that runs through the wine and lengthens it. Nothing here is exuberant or sweet. Everything is restrained, refined, vibrant. The finish offers tart cherry, spice, damp stone and that sense of serene energy that distinguishes great terroir-driven Pinot Noirs.
