Description
From the chalky soils of the Penedès, one of the Rimarts winery's most personal sparkling wines is born: Rimarts Brut Nature Reserva Especial Chardonnay. In a land where classic coupage reigns supreme, this commitment to pure Chardonnay represents a declaration of intent. It was Ricard Martínez who, after a particularly warm harvest, decided to defy local orthodoxy and create a Cava that would clearly express the character of this variety in a Mediterranean climate. The result is a wine that reflects both the richness of the terroir and the artisanal precision of a house that continues to disgorge each bottle by hand.
Winemaking
Rimarts Brut Nature Reserva Especial Chardonnay is made using the traditional method: after a manual harvest, the must ferments in stainless steel tanks at a controlled temperature, preserving the varietal freshness of the Chardonnay. It then undergoes a second fermentation in the bottle and rests for more than 50 months on the lees, which adds complexity, texture and elegant notes of pastries. Disgorgement is carried out by hand, without the addition of liqueur d'expédition, making this an authentic, dry Brut Nature, a true reflection of the Rimarts house style.
Taste
Rimarts Brut Nature Reserva Especial Chardonnay has a bright golden hue and very fine, persistent bubbles. On the nose it displays aromas of baked apple, ripe pear and toasted bread, with hints of dried fruits, pastry cream and a subtle mineral background. On opening, it offers delicate floral nuances. The palate is full, creamy and taut, with a lively acidity that balances the fruity ripeness. The finish is long, with a slightly saline aftertaste, perfect for pairing with seafood dishes, rice dishes or cured cheeses. A Cava that combines sophistication and honesty, faithful to the pure expression of Chardonnay in the heart of the Penedès.
