Description
In the heart of Sant Sadurní d'Anoia, the birthplace of Cava, the Rimarts family makes sparkling wines with soul, honesty and a deep respect for the land. Rimarts 24 Brut Nature Reserva is born from this philosophy: to express the purity of the Penedès landscape without artifice or added sugars. Ricard Martínez, heir to the family legacy, has been committed from the outset to the artisanal production of Cava, marked by manual work, disgorging by hand and minimal intervention. This Cava represents a courageous decision: to let time - at least 24 months of ageing on the lees -be the only sculptor of the wine. The classic blend of Xarel.lo, Macabeo and Parellada, from organic vineyards in the Penedès, captures the essence of a terroir of chalky soils and Mediterranean climate, tempered by the sea breeze.
Winemaking
Rimarts 24 Brut Nature Reserva is made by hand in small boxes to protect the integrity of the grapes. After a first fermentation in stainless steel tanks, the base wines are blended and bottled using the traditional method. The second fermentation in the bottle gives rise to a fine carbonic, and the minimum ageing of 24 months in the bottle provides structure, depth and a perfectly integrated bubble. As Brut Nature, no sugar is added after disgorging, which is carried out by hand and the date is shown on the label.
Taste
Rimarts 24 Brut Nature Reserva is bright pale yellow with fine bubbles. The nose offers notes of white fruit, citrus fruits, dried flowers and toasted bread, with a subtly aniseed and mineral background. The palate is vibrant, dry and elegant, with crisp acidity and a long, slightly saline finish. A gastronomic Cava, versatile and without make-up, perfect for those who seek authenticity in every sip.
