Robert Parker's Wine Advocate
Fresh apple and grapefruit dominate in the nose and on the generously juicy, polished and delicate palate of Pascal Doquet's NV Brut Blanc De Blancs Horizon Disg. 1/2013. Accents of mint, Thai basil and thyme add to this cuvee's metaphorically cooling and palate-cleansing aura. Hints of chalk and salt serve for interest and saliva inducement in a sustained, luscious finish.

Description
Pascal Doquet Horizon Blanc de Blancs Extra Brut is a champagne that expresses the purity of Chardonnay at its best. Produced in the Champagne region, this wine is composed of grapes from Premier Cru and Grand Cru vineyards, mainly from the Côte des Blancs and the Bassu and Bassuet terroirs in the Sézannais. The soils of this region, rich in limestone, bring a distinctive mineral character to the wine.
Winemaking
The Pascal Doquet winery is characterised by its commitment to biodynamic viticulture, which ensures environmentally friendly practices and minimal intervention in production. Pascal Doquet Horizon Blanc de Blancs Extra Brut is made using 68% of wines of the year and 32% of reserve wines started in 2012. In addition, the wine is aged on the lees for at least 3 years, which gives it additional complexity and depth. The dosage is 5 g/l, which classifies it as an Extra Brut champagne.
Taste
Pascal Doquet Horizon Blanc de Blancs Extra Brut has a balanced and elegant taste. On the palate, its bubbles are fine and creamy, complemented by a lively acidity and a mineral profile that highlights the freshness of the wine. Notes of toasted almond, fresh fruit such as green apple and pear, as well as citrus hints of lemon and grapefruit can be appreciated. The finish is long and persistent, with a subtle saline character that invites further tasting.
