Description
Pascal Cotat La Grande Côte is an indisputable reference in the Sancerre appellation. This wine is 100% Sauvignon Blanc, a variety that exceptionally reflects the character of its terroir. The vineyard, of about 2.3 hectares, is located on the steep slopes of Chavignol, an area renowned for producing some of the best wines of Sancerre. The soils in this parcel are a combination of limestone and clay, which lends a vibrant minerality to the wines. The vines are over 60 years old, which contributes to the complexity and depth of the wine.
Winemaking
The winemaking process is meticulous and respectful of the nature of the vineyard. Harvesting is done by hand, and the grapes are pressed whole to preserve the purity of the fruit. Fermentation is carried out with indigenous yeasts in large used oak barrels, and the wine is aged for over a year in these same barrels. Interestingly, no fining or filtration is carried out, keeping the wine in its purest and most natural form.
Taste
In the mouth, Pascal Cotat La Grande Côte stands out for its elegance and structure. It is a full-bodied wine, with remarkable freshness and a marked minerality, reflecting the chalky soils. Predominant flavours include notes of white fruits such as pear and peach, along with hints of lemon citrus and subtle nuances of almond and smoke. Throughout the tasting, the mouthfeel is enveloping but perfectly balanced, with a vibrant acidity that gives it a very persistent and complex character. Although this wine can be enjoyed young, it shows its full potential after a few years of bottle ageing. It is an ideal wine to pair with rich seafood, cured cheeses or white meats.
