They kept five barrels from 2013, and the wine kept the layer of flor, being unblended with any other vintages; so this wine has nine years in biological aging and is from a single harvest. They did a blend from four of those barrels to produce what they consider their greatest white wine, the 2013 Villamarta, which is unfortified but with 15% natural alcohol. It has the parameters to be Sherry, and it would be a textbook, old-style Fino, but it has not yet passed the approval from the appellation, although they are not worried. It has incredible finesse, great complexity (lemon, aniseed, mint, esparto glass...) and some reductiveness, and it's silky (they've been doing bâtonnage to put the dead yeasts, or 'cabezuelas,' in suspension). This should develop gunpowder and reductive notes in bottle and age over the years. It's complex but very harmonious and surprisingly easy to drink. They were inspired by the wines from the 1940s and 1950s, and they are convinced this wine is going to age for 50 years. 1,200 bottles.

The Luis Pérez Villamarta wine, an oenological jewel of the Luis Pérez winery, is a reflection of the elegance and finesse that characterises great wines. This wine stands out for its meticulous winemaking and exceptional ageing, elements that contribute to its unique and distinctive profile.
Luis Pérez Villamarta is characterised by a mild spring and summer, with a typical rainfall of the region, conditions that favoured the elegance of the wines of that year. The Villamarta is a single varietal, made from 100% Palomino Fino, an indigenous variety that gives the wine a unique identity. The 40-year-old vineyard is cultivated using a special pruning method known as "moflete", a traditional technique in Jerez. This method, together with a soil of albariza de barajuelas, contributes to a limited yield of approximately 5,000 kg/ha, ensuring high quality grapes.

Winemaking

The grapes are harvested continuously for almost two months, selecting clusters at different stages for different types of wines. In the case of Villamarta, fermentation reaches 15 natural degrees in barrel, and ageing is focused on restricting the wine's contact with oxygen rather than on reducing the alcohol content and glycerol. This ageing process is carried out without adding sulphur, maintaining the purity and authenticity of the wine.

Taste

Luis Pérez Villamarta is a wine that stands out for its finesse, complexity and harmony. It has notes of lemon, aniseed, mint and esparto grass, with a touch of reductiveness. The silky texture of the wine is achieved by bâtonnage, a process that consists of suspending the dead heads or yeasts. This wine promises to develop gunpowder and reductive notes over time, ageing gracefully in bottle. Inspired by the wines of the 1940s and 1950s, Villamarta is a wine that, according to the winery's experts, has the potential to age for 50 years, making it a timeless classic. With a limited production of 1,200 bottles, this wine represents an oenological treasure for connoisseurs and wine lovers.
