There is also a new NV Manzanilla Pasada Balbaína Alta to complete the Manzanilla range with an older wine with an intense golden color and a full nose with notes of esparto grass. It's a wine from a small producer that had a small vineyard in Balbaína Alta (that was pulled up) and had produced wine for them. They bought the remaining wine, and from the casks they selected the five that had more 'pasada' character and have kept the rest to make an Amontillado. So, this wine is a one-off, a Manzanilla they estimate between 15 and 18 years of age, really extreme, with the creaminess of the age and the velvety soft palate with incredible elegance and the mid-palate with a bitter sensation from the 'cabezuela' dead yeasts. It has no acetaldehyde and is extremely elegant, with a tastiness that makes you salivate and remains at the front of the palate. It's a shame this is a one-off, because I have not tried that many Manzanilla Pasada of this quality level. Only 2,500 bottles were produced, and it will never be made again. It was bottled in May 2019. This should last in bottle.

Description
The wine La Riva Manzanilla Pasada comes from one of the vineyards of this winery, located in the northern part of the Cerro de los Cuadrados, specifically in Balbaína Alta.
It is a vineyard that is more than 45 years old, composed of albariza soils that have a great impact on the flavour and aroma of the fruit harvested in this area.
This wine is one of the manzanillas recovered by the new management of this winery, which had been inactive since 2012 and was currently refreshed by the family to bring this wine back to the market.
Winemaking
The wine Manzanilla Pasada Balbaína Alta de La Riva is an example in which traditional methods are applied for the processing of the grapes, coming from vineyards of Marco de Jerez.
It is characterised by having soils with thick closed albariza that were cultivated with 45 year old vines, which would be uprooted after the last harvest.
These grapes are the ones that were used to refresh a family solera, using some barrels, and then choose the five best varieties, and make this extraordinary and unique Manzanilla.
In the bottling process, the 7 barrels with the best Manzanilla character were selected and then taken to market, leaving the rest of the wine in reserve.
Taste
The Manzanilla Pasada Balbina Alta wine has a very spicy flavour and a golden yellow colour that makes an impact in the glass. The aromas are also influenced by certain earthy tones and subtle spicy notes.
When you taste it, you will notice on the palate the extreme smoothness that characterises it and a dry and balanced sensation.

The Manzanilla Pasada Balbina Alta wine is more than 15 years old, and thanks to its peculiar taste, it has been positioned in the great podiums of Sanlúcar as a unique and high quality wine. It is perfect to accompany seafood and red meats.
