The grapes come from different plots in the Bourgogne AOC, planted on clay-limestone soils that provide freshness and fine mineral tension. The continental climate favours slow ripening, allowing the BurgundyPinot Noir to develop defined aromas and great finesse. The aim here is not excessive power, but transparency, harmony and regional typicity.

Winemaking

At Joseph Drouhin Laforêt Bourgogne Pinot Noir, the winemaking process follows strict house specifications, working with grapes and musts from selected partner winegrowers. The grapes are harvested by hand in perforated boxes, with possible additional selection. Total destemming and maceration with fermentation for 1 to 2 weeks, using indigenous or selected yeasts depending on the vintage, and vertical or pneumatic pressing for precise extraction.

Ageing lasts between 10 and 14 months in French oak barrels, with 15-20% new wood. Each decision is based on tastings and technical analysis, always prioritising the expression of the terroir and the character of the vintage.

Taste
