Description
Fernando de Castilla Classic Dry Oloroso is one of those sherry wines that does not seek to seduce with easy fruitiness or pleasant notes. It originates from a historic house in the heart of Jerez de la Frontera, a winery that has managed to preserve the classic style of the region without turning it into mere folklore. Here, everything revolves around purity of style, patience and absolute respect for a tradition that views wine as the accumulation of time. Produced from Palomino Fino grapes within the D.O. Jerez Xérès Sherry, this dry Oloroso is born of a landscape of albariza, harsh light, Atlantic winds and Andalusian heat – an extreme yet privileged territory that imbues it with a salty edge, depth and a unique identity. There is courage in continuing to champion this austere and classic profile in times of immediate exuberance.
Production
The grapes are brought to the winery for a clean and precise vinification process, with fermentation taking place in stainless steel tanks. Subsequently, Fernando de Castilla Classic Dry Oloroso is fortified to approximately 18% vol. to set it on the path towards a full oxidative ageing process. From there, its true development begins: it is aged in American oak casks following the traditional criaderas and soleras system, where the wine gradually gains concentration, complexity and that deep, dry character, rich in nuances, which defines a great Jerez Oloroso. The average ageing period is around 6 years, sufficient to blend wood, oxygen and wine into a harmonious, serious and deeply gastronomic whole.
Flavour
The nose of Fernando de Castilla Classic Dry Oloroso does not burst forth; it unfolds. First come notes of walnut, toasted hazelnut, fine oak, blond tobacco and that hint of an old cellar, with its dry staves and cool, dim light. This is followed by notes of bitter orange peel, dark caramel, delicate spice and a hint of saltiness that keeps everything in balance. On the palate, it is dry, broad and enveloping, yet never heavy. It flows with poise, boasting a satiny texture and a depth reminiscent of nuts, antique furniture, dry undergrowth and a barely bitter, supremely elegant finish. The finish is long, serious, almost umami, with a savoury persistence that calls for intense cuisine. A generous wine for purists, uncompromising in its classicism and beautifully relentless.
