Description

Since its beginnings, Domaine de Villaine has been guided by a philosophy of absolute respect for the land and varietal authenticity. In " Les Montots ", its Mercurey cuvée, that vision takes shape with an almost ascetic precision. Aubert de Villaine - co-director of the legendary Domaine de la Romanée-Conti - chose this 1.6 ha plot in the Côte Chalonnaise to explore a pure, unadorned expression of Burgundian Pinot Noir. The vines, 40 to 50 years old, are rooted in clay and limestone soils, which provide tension and mineral character. The continental climate, with marked temperature fluctuations, favours a slow ripening process that preserves freshness and aromatic expression. A key decision was to keep the use of new oak to a minimum, so as not to cover the austere echo of the soil. Here, the earth speaks louder than the hand of man.

Winemaking

The grapes destined for Domaine De Villaine Mercurey Les Montots are carefully selected and sorted in the vineyard. Forty percent of the bunches are fermented whole, providing structure, tension and a more vertical profile. Fermentation takes place in wooden vats, with maceration lasting 14 to 17 days to extract fine tannins and complex aromas. The wine is then aged for 10 to 12 months, with only 5% new oak. This subtle ageing respects the character of the vineyard, without imposing woody aromas, allowing Domaine De Villaine Mercurey Les Montots to retain its raw, precise and sincere identity.

Taste

Domaine De Villaine Mercurey Les Montots does not seek to impress by opulence, but by purity and truth. On the nose, discreet black fruits - cassis, black cherry - intertwine with earthy notes, dried spices and an elegant chalky minerality. The palate is restrained but deep: fine tannins, taut texture, vibrant acidity. There is a linear freshness that runs across the palate like a sharp blade. Nothing is exuberant; everything is precise. This is a Pinot Noir that looks more towards structure than sweetness of fruit, ideal for those seeking wines with pulse, energy and longevity.
