Description
Cueva Bobal Ancestral is a natural sparkling wine also called Pét-nat, made exclusively with the Bobal variety by the Bodegas Cueva winery in Spain in the Utiel-Requena area (Valencian Community).
The grapes used to make this wine come from vineyards grown on clay-limestone soils at an altitude of 650-700 metres above sea level.
This wine comes from a versatile and very singular variety that is a great representation of the land it comes from.
Winemaking
The grapes are harvested by hand and directly pressed. Alcoholic fermentation with indigenous yeasts is carried out in stainless steel tanks.
The wine is aged for a minimum of 4 months on its fine lees in the bottle. No disgorging or filtration, stabilisation or clarification is carried out.
Taste
Cueva Bobal Ancestral is a wine with intense fruity aromas and herbal notes and is very refreshing on the palate. It has sparkling bubbles, round tannins and good acidity.

The name Pét-nat comes from French and translates to natural sparkling wine. These wines are often slightly sparkling, fresh, of excellent quality, modern and low in alcohol.
The elaboration of this natural sparkling wine under the ancestral method is obtained by placing the fermenting must in a bottle that is sealed with a crown cap, so that it continues its primary fermentation, and the bubbles are generated.
In the gastronomic field, this wine is perfect as an aperitif and is ideal to accompany Iberian cold meats, white fish, red meat, game, pasta, cheese and seafood.
