Description

On the invisible border between the Aube and utopia, the Ruppert-Leroy family left behind the conventional model to embrace biodynamics with radical consistency. It was in 2010 that Emmanuel and Bénédicte, former top-level athletes, decided to convert the family vineyard into a winery that would express the chalky soul of Essoyes, in the Côte des Bar, without any make-up. There, where the Kimmeridgian soils (the same as in Chablis) combine with a harsh continental climate, Ruppert Leroy Papillon was born, a Champagne named after the first living creature to return to the vineyards after the abandonment of chemicals. A butterfly. Small, silent, but full of meaning.

This brut nature is made entirely from Pinot Noir, coming from plots that have never been treated with herbicides or synthetic fertilisers. The vines, worked with almost monastic meticulousness, drink from soils of grey marl and limestone, which provide a vibrant, mineral backbone. Each bottle of Ruppert-Leroy Papillon is a statement of principle: minimum intervention, maximum truth.

Winemaking

The grapes are harvested by hand at optimum ripeness, with low yields that prioritise intensity rather than volume. After a gentle and precise pressing, the must ferments with indigenous yeasts in old oak barrels, with no temperature control or external additions. There are no corrections, no filtering, no fining. Ruppert-Leroy Papillon rests on fine lees for at least 20 months in bottle, developing complexity without losing freshness. No expedition liqueur is added: it is bottled as Brut Nature, with no added sugars, no make-up.

Taste

From the very first moment, Ruppert-Leroy Papillon does not seek to please: it seeks to move. The nose opens with austere but precise notes: red apple skin, toasted bread, hawthorn blossom and a hint of wet stone. There is tension from the start, like a string vibrating between the raw and the ethereal. With air, nuances of wild pomegranate, dried hay and a chalky minerality that seems to emerge from the very centre of the glass.

On the palate, the entry is sharp, straightforward and uncompromising. A pure, vertical acidity that cleanses the palate and leaves it ready for the dry, almost saline texture, reminiscent of a sea breeze on hot rock. There is no sweetness, no caress: there is structure, energy, and an almost tactile character. The fruit -if it shows through- appears in the form of acid raspberry and citrus peel, but always restrained, at the service of minerality and form rather than volume.
