Behind this marvel is Puro Rofe, a winery that is committed to recovering the essence of Lanzarote's wines. The soul of Puro Rofe Uga is the Listán Negro, a grape that has learnt to coexist with the volcanic ash and saltpetre of the Atlantic. It grows at Finca Mota, where Pedro Umpiérrez and Ascensión Robayna have turned the work in the vineyard into an art.
At first glance, Lanzarote 's vineyards defy logic. The vines are buried in holes dug into the volcanic ash, a method that not only protects them from the wind, but also retains the scarce humidity. The soil, marked by rofe (a kind of volcanic sand), gives the wine its special identity.
Winemaking
