Description
The Pàcina Toscana Rosso wine is an emblematic representation of the tradition and characteristics of the Chianti side. This wine is the reflection of the soul of Sangiovese in this region. Following tradition, a small part of Canaiolo and Ciliegiolo is incorporated, which constitute 5% of the blend, while Sangiovese dominates with 95%.
The vineyard covers an area of 6.5 hectares, with vines ranging in age from 10 to 38 years old. The soil is known as Tufo di Siena, a mixture of sand and clay. The production is 5,000 kg per hectare.
Winemaking
Spontaneous fermentation and long maceration are carried out in cement tanks for a period of 6 weeks. After the first winter, the wine is transferred to old oak casks of 17 and 25 hectolitres and barrels of 500 litres, where it remains for 18 to 24 months. It is then left to settle for at least two years in the bottle before being released onto the market. Importantly, it is not filtered and a small amount of sulphites is used only if necessary. Generally, the total amount of sulphites is always less than 10 mg/lt, and this is a constant in all their wines.
Taste
On the nose, notes of violet, terracotta, chrysanthemum, plum and cherry. On the palate, we find sweet, bitter, acid, saline and umami tastes. The tannin is present and adequate.
