Description
In Saint Romain, that high village overlooking the Côte de Beaune and "turning" towards the Hautes Côtes, Olivier Leflaive finds its natural habitat: freshness, rock and Burgundy without make-up. For decades, Olivier Leflaive has been fine-tuning the balance between precision and pleasure and, as is often the case here, the courage is not to do more, but to do less: harvest by hand, wait for the right ripeness and let the landscape take over. Olivier Leflaive Saint Romain Blanc is made from pure Chardonnay, aged to speak of soil rather than wood.
The area sits on clay-limestone soils with active limestone, at 290-430 m altitude: a cool amphitheatre where acidity carves itself and minerality is not an ornament, but the skeleton. Saint Romain brings a more vertical profile than the warm plain: breezes, cool nights and a tension that reminds us why the Côte de Beaune is the cradle of great white Burgundy wines.
Winemaking
At Olivier Leflaive Saint Romain Blanc, the grapes go in and are gently worked: partial destemming/crushing and 24 hours of static racking to clean the must without stripping it. Alcoholic fermentation and malolactic fer mentation take place in barrels, seeking texture without losing nerve. Total ageing is 12 months, with a final stretch of 4 months in stainless steel to "focus" the wine and restore tension. The ageing is done in 100% oak, with approximately 20% new oak, to add structure without masking the origin.
Taste
In Olivier Leflaive Saint Romain Blanc, the colour is pale yellow, luminous. The nose is Burgundian on the nose with white flowers, restrained yellow-fleshed fruit and a fine line of citrus. With air, white peach, a touch of acacia and a background of wet stone that announces its character.
The palate enters straight and vibrant: a chalky line, salivating freshness and an "inorganic" sensation (chalk, flint) that tightens the contours. The oak is a whisper, adding cream and grip, not vanilla. Long finish, ripe lemon, salinity and rock: a serious, precise and tremendously gastronomic Chardonnay from Saint Romain.
