One of the comparative sleepers of the range is the 2023 Chapelle-Chambertin Grand Cru (Domaine Louis Jadot), from vines planted in the 1920s that used to belong to Domaine Clair Daü. Offering up aromas of raspberries, rose petals, bergamot and licorice, it's medium to full-bodied, layered and suave, with a perfumed core of fruit, succulent acids and a long, saline finish.

Description
The story of Louis Jadot Chapelle-Chambertin Grand Cru was born with the vision of maison Louis Jadot, emblem of Burgundy since 1859, which has tirelessly defended the respect for the terroir. In the south of the commune of Gevrey-Chambertin, in the Côte de Nuits, the Pinot Noir vines are rooted in chalky-clay soils: deep limestone that gives structure, and shallow clay that provides volume and roundness. The vineyard is located on a gentle, east-facing slope, which receives morning light and is protected from overheating. Chapelle-Chambertin, one of Gevrey's eight grands crus, produces wines that combine precision, depth and austere elegance.
Louis Jadot 's commitment to excellence is reflected in every decision: handpicking in small crates, strict cluster-by-cluster selection, careful destemming, and meticulous vinification that seeks to exalt the character of the site rather than impose the hand of man.
Winemaking
Fermentation of Louis Jadot Chapelle Chambertin Grand Cru takes place in open vats, made of wood or stainless steel, for 3 to 4 weeks. During this process, pigeages are applied twice a day, which favours a controlled extraction of tannins, colour and aromatic expression. The wine is aged for approximately 18 months in French oak barrels, with one third in new barrels. This refinement provides structure, soft spice and great ageing potential, without overshadowing the varietal purity of the Pinot Noir or the identity of the terroir.
Taste
On the nose, Louis Jadot Chapelle Chambertin Grand Cru displays layers of ripe red fruit -black cherry, raspberry- interwoven with earthy notes, truffle, undergrowth and fine spices. The entry on the palate is firm and enveloping: polished tannins, lively acidity and a minerality reminiscent of wet stone. With air, hints of cocoa, tobacco leaf and a faint floral background appear. Long, dense and refined, this Grand Cru does not give itself away easily: it requires time, decanting and attention. It is a wine of contemplation rather than immediacy, ideal with rosé meats, mushrooms, game dishes or cured cheeses. It represents the Burgundian synthesis of power and elegance.
