Description
In the quiet village of Souvignargues, in the heart of the southern Rhône, an oenological gem that captures the essence of its terroir was born: Le Petit Oratoire Saturday Night At Souvi. This wine is born from a unique parcel of sandy soil, a distinctive feature of the region, carefully worked on weekends, which inspired its name.
The composition of this wine is a perfect harmony: 80% Garnacha Negra and 20% Cinsault. The vines, with an average age of 45 to 50 years, are cultivated in a certified organic way and without irrigation, deeply respecting the natural balance of the environment. The grapes are harvested by hand, meticulously selecting each cluster to ensure maximum quality.
Winemaking
The winemaking process is an ode to tradition and respect for the raw material. A semi-carbonic maceration with whole bunches is carried out for 12 days, allowing for spontaneous fermentation with indigenous yeasts in cement tanks. This method brings out the purity of the fruit and the expression of the terroir. Le Petit Oratoire Saturday Night At Souvi ages for more than 9 months in these same tanks, without fining or filtration, preserving its authentic character.
