Cinsaut variety is original from the Languedoc-Roussillon region. It is rather delicate but can endure well warm climates and drought. It is not particularly vigorous, with late budding, medium ripening and big berries. It is prone to wood diseases as Stereum hirsutum or wood rot and eutypa dieback. Cinsaut variety is fruitful and productive, very resistant to drought and leaves withering. If grown in calcareous soils, it can suffer chlorosis, and it is also sensitive to mite and grapevine moth.

Being similar to Garnacha variety, Cinsaut is well acclimated to the temperate and dry soils from the south of France, where its performance is high and the control is recommended if delicate wines should be produced. Cinsault red wines are soft, fruity and aromatic when young yet surprisingly long-lasting. Sometimes Cinsault red wines are blended with Cariñena. It is also an interesting variety for rosé wine production, that outcome fresh, fruity and perfumed. Coupage red wines are more common than single-variety ones, so the typical blending is with Cariñena.
