Description
Champagne La Borderie La Confluente Blanc de Blancs is a Blanc de Blancs Millésime sparkling wine, from a blend of two plots located at the confluence of the Seine and Maple rivers, in the Côte des Bar. The composition of this wine is predominantly Chardonnay (80%), complemented with Pinot Blanc (20%), coming from the parcels 'Les Devoix' in Merrey sur Arce and 'Val Moré' in Bar sur Seine.
Winemaking
The winemaking of La Confluente is meticulous and detailed. One notable aspect is that 5% of the wine is vinified in oak barrels, which adds a unique complexity and structure to the wine's profile. In addition, the juice used comes exclusively from the hearts of the cuvées, ensuring superior quality. This wine is aged for 45 months in the cellar, which contributes to its distinctive character. The dosage is 2 g/l (Extra Brut), which indicates a very low level of residual sugar, resulting in a drier wine with a greater expression of the terroir.
Taste
La Borderie La Confluente Blanc de Blancs offers a rich and complex sensory experience. Visually, it has a lemon yellow colour with pale greenish reflections. On the nose, delicate notes of lime, white peach, acacia flowers, fresh grapes and limestone stand out. On the palate, this wine is clean and fresh, with a crisp, pulpy fruitiness, underscored by a lemony, taut acidity. These elements combine to create a vibrant and refreshing tasting experience.
La Borderie La Confluente Blanc de Blancs is an ideal wine to pair with a variety of dishes. It is especially recommended with Fines de claire oysters, avocado and scallop carpaccio with passion fruit, prawns and creamy risotto with crispy asparagus, and fresh goat's cheese.
