Description
At the mouth of the Umia River, where the Atlantic meets the granitic lands of Rías Baixas, the old Caíño Tinto vines that give life to Eulogio Pomares Carralcoba Caíño Tinto are born. With more than 70 years of history rooted in poor and stony soils, these vines are the testimony of a tradition that Eulogio Pomares honours with each manual harvest, carried out with care and direct selection in the vineyard. The result is an Atlantic wine that reflects with purity the wild and delicate character of this autochthonous variety.
Winemaking
The grapes are vatted whole, without destemming, respecting the identity of the fruit as much as possible. Fermentation takes place spontaneously, thanks to the indigenous yeasts, in open concrete vats that allow natural contact with the environment. After this process, the Eulogio Pomares Carralcoba Caíño Tinto rests for 8 months in large chestnut casks, an unusual choice that provides unique nuances of texture and complexity, always without overshadowing the natural freshness of the Caiño Tinto.
