The Caiño Tinto and Albariño grapes undergo alcoholic fermentation in stainless steel tanks and are aged on the lees for 3 months. The Espadeiro grape must undergoes alcoholic fermentation in French oak barrels. Finally, the two wines are blended together.
Description
One autumn morning, with the mist barely rising over the granitic vineyards of Fontecón, the idea arose to pay homage to the elegance contained in lightness. Eulogio Pomares and his winery, a living legacy of Galician history, replanted Fontecón as a trellis in Padrenda (Meaño), on granitic soils with a hint of red clay commonly called "castel". The vineyard, fifteen years old and with 2,400 vines per hectare, was already showing a firm bearing, like a promise of ancient freshness. The brave gesture was to work a Galician rosé without the security of a protected designation - a varietal wine, free of D.O.P. - which, nevertheless, embodies the soul of the Val do Salnés with exquisite authenticity.
The varieties used in Zárate Fontecón Rosé intertwine the weight of tradition: Caiño Tinto, Espadeiro and Albariño. They bring not only history, but also a unique symphony of aromas and structure, cultivated with respect for the environment and assembled with artisan precision.
Winemaking
In the production of Zárate Fontecón Rosé, after manual selection, Caiño Tinto and Albariño are destemmed and cold macerated for three hours. The resulting must is extracted by bleeding and fermented in stainless steel tanks, where it remains on its fine lees for three months. The Espadeiro is fermented as a whole cluster in used French oak barrels, also aged for three months on the lees. The final blend of steel and wood gives rise to a fresh and structured rosé, which exudes precision and Atlantic character.
Taste
On the nose, Zárate Fontecón Rosé displays notes of delicate red fruit -wild strawberry, cherry- and a hint of ripe citrus fruit, over a mineral background that evokes wet granite. On the palate, it is pure nerve: vibrant acidity, tense passage, marked by the freshness of the Atlantic and a fine texture reminiscent of chalk. There is no sweetness or excessive fruit concession: there is clarity, direction, a clear intention to convey Galician terroir.
The finish is long, with a subtle salinity that lengthens the drink and keeps you coming back. One senses the firm hand of the winemaker, who has preferred to suggest rather than impose. This is a Galician rosé that does not lend itself to the trivial category: there is thought, there is minerality, there is decision. And, above all, there is Galicia in its purest form.
