Description
Droin Chablis from the Droin family is one of the most representative exponents of the Burgundy region of France, known for producing white wines of exceptional quality. This wine is made entirely from Chardonnay grapes, sourced from vineyards that the Droin family has cultivated for generations, tracing its viticultural roots back to 1620. The vineyards are spread over 9.33 hectares and are located on Kimmeridgian soils, rich in marine fossils, which gives the wine a unique minerality.
Winemaking
The winery has been characterised by combining traditional winemaking techniques with modern processes. The grapes are partly harvested by hand, and after a gentle pneumatic press, the must is fermented naturally in stainless steel tanks with indigenous yeasts, thus preserving the essence of the terroir. Ageing takes place for 10 months in these same tanks, which maintains the freshness and enhances the natural acidity of the wine, a distinctive feature of Chablis.
Taste
Droin Chablis offers a vibrant and balanced taste experience. On the nose, fresh fruit aromas of pear, accompanied by delicate floral notes, and more complex nuances such as oyster shell and a touch of honey, give it aromatic depth. On the palate, it is a medium-bodied wine, with an incisive and refreshing texture that stands out for its minerality. Its lively acidity, combined with a saline finish, makes it a versatile wine, capable of evolving over time. Although enjoyable in its youth, it can be cellared for years, developing more complex aromas of flint and forest over time.
Droin Chablis is ideal to accompany a wide range of dishes, from seafood and fresh fish to white meats or even more complex dishes with light sauces. Its balance between freshness and depth makes it also an excellent aperitif wine.
