Jean Marc Dreyer belongs to that lineage of vignerons who understand wine as a direct language between the land and those who drink it. His Origin range was born from a radical impulse: to let each variety speak without disguise, without oenological make-up. In the case of Dreyer Origin Auxerrois Macération, Jean Marc Dreyer delves into an unusual grape, a descendant of Chardonnay and related to Pinot Noir, grown in the chalky soils of Alsace, where the cold, dry climate forces the vines to struggle and thus to express themselves clearly.
Winemaking
The key to Dreyer Origin Auxerrois Macération lies in whole-cluster maceration for 10 to 20 days, depending on the vintage. This technique, unusual for whites, allows the extraction of subtle tannins, texture and aromatic complexity. After maceration, the wine is aged in used barrels for 11 months, without excessive intervention, to respect the pure character of the fruit and terroir. It is not clarified or filtered and bottled with minimal intervention.
Taste
Visually, Dreyer Origin Auxerrois Macération has a golden amber hue, slightly cloudy. The nose is a subtle symphony of sea saltiness, dried white flowers, orange peel, ripe peach and a spicy background reminiscent of white pepper and oolong tea. The palate is dry, with a lively acidity that structures the palate, accompanied by an enveloping, almost tactile texture provided by the maceration. The finish is long, saline, with an elegant bitter touch reminiscent of citrus peel and dried herbs.
