Description
In Alsace, a land of aromatic symmetries and floral whites, Dreyer Héraclès Gewürztraminer Macération emerges as a quiet rebellion. Inspired by the oxidative wines of the Jura, Dreyer has decided to push the expressiveness of Gewürztraminer to the limit: he macerates it, lets it evolve without intervention and is not afraid of oxidation. The grapes come from plots with clay-limestone soils, under the influence of the moderate continental climate that defines the area, with sunny days and cool nights. Here, the Gewürztraminer reaches aromatic plenitude, but the aim is not to exploit this exuberance: Dreyer seeks restraint, texture, mystery.
Winemaking
The grapes are harvested at full maturity, followed by maceration on the skins for several weeks. This prolonged contact allows tannins, texture and deeper aromatic notes to be extracted, away from the immediate fruit profile. The wine is then transferred to a demi-muid (large barrel) where Dreyer Alsace Héraclès Gewürztraminer Macération is aged for three years without topping up. This ageing "a la flor d'oxidation" - without fillers - is a radical decision that favours the emergence of evolved notes, with controlled oxidation that brings character and depth. The wine is bottled without filtering or fining, in order to preserve its authenticity.
Taste
Far from the usual Gewürztraminer, there is no exuberant perfume here, but a more sober and deeper spectrum: dried citrus peel, dried apple, oriental spices, walnut, black tea and oxidised honey. The nose is serious, almost introspective. On the palate, the texture caresses with fine tannins, accompanied by a slight noble bitterness and an enveloping salinity. The wine is dry, taut, with a long, spicy finish, dominated by hints of bitter orange, dried apricot and saffron. Dreyer Héraclès Gewürztraminer Macération is not an indulgent wine: it demands attention and rewards with complexity, a white wine of meditation rather than thirst, ideal for those who enjoy the border between the ancestral and the radical.
