Description
Jean Marc Dreyer makes wines that speak of the soil, the silence of the vineyard and the skin of the grape. Dreyer Origin Sylvaner Macération is the result of a courageous decision: to give time to the contact between skin and must, allowing the wine to absorb not only aromas and colour, but also structure and identity. At his winery in Rosheim, Alsace, Dreyer practises radical biodynamic viticulture, without make-up or shortcuts. The chalky soils, cool climate and respect for natural cycles make each vintage an intimate conversation with the land.
Winemaking
Dreyer Origin Sylvaner Macération is made from 100% Sylvaner, grown without synthetic products, harvested by hand and macerated for 10 to 20 days, depending on the condition of the fruit. Fermentation is spontaneous, without the addition of commercial yeasts, and ageing takes place in neutral demi muid for 11 months, without fining or aggressive filtering. The wine is bottled with minimal intervention, allowing it to retain its pure, raw and luminous character.
Taste
Dreyer Origin Sylvaner Macération has a golden colour with faint amber tints. The nose is subtle but complex: white plum, dried apricot, lemon zest, dried flowers and a mineral background reminiscent of limestone. Notes of light honey, white tea, green almond and dried herbs appear. The palate is taut and elegant. The entry is juicy, with fresh citrus, apple peel and a firm acidity. The tannins, delicate but present, add structure without detracting from the freshness. The finish is long, saline, with hints of ginger, thyme and a slightly earthy texture that invites further exploration.
A wine to drink attentively, it challenges the established and offers an honest, precise and vibrant reading of Sylvaner and its place of origin.
