Fermented with indigenous yeasts and aged on lees in 200, 300 and 500 litre French oak barrels. Malolactic fermentation completed. Addition of 30% of reserve wines for the second fermentation in bottle with a minimum ageing of 30 months and without final dosage (Extra Brut).
Description
Dehours La Côte Réserve Perpétuelle Extra Brut is a unique expression of viticulture and oenology. This wine comes from a specific plot, La Côte en Bosses, located in Mareuil-le-Port. The vineyard is planted with a blend of three varieties: Chardonnay, Meunier and Pinot Noir. This combination of varieties is an integral part of the identity of the plot, offering a pure representation of the terroir.
Winemaking
Vinification is carried out in 200, 300 and 500 litre barrels, using indigenous yeasts and an ageing process on lees. This method contributes significantly to the complexity and character of the wine. Production is limited, with only 2466 75cl bottles produced, and each bottle carries detailed information on bottling and disgorging dates. The wine is not dosed, which means that no extra sugar is added during the winemaking process, and is classified as Extra Brut.
