Fermented with indigenous yeasts and aged on lees in 200 and 300 litre French oak barrels. Malolactic fermentation completed. Addition of 30% of reserve wine for the second fermentation in bottle with a minimum ageing of 30 months and a dosage of 1.1 g/l (Extra Brut).
Description
Dehours Maisoncelle Réserve Perpétuelle Extra Brut is a unique expression of viticulture and oenology. Hailing from Mareuil-le-Port, this wine stands out for its origin in a specific vineyard, Maisoncelle, known for its old vines of Pinot Noir and a small percentage of Meunier. These vines, planted on clay-loam soils, poor in limestone, but rich in iron, bring a distinctive complexity and structure to the wine. The northeast orientation of the vineyard and its hillside location above the village of Port à Binson contribute to the unique characteristics of this champagne.
Winemaking
Dehours Maisoncelle Réserve Perpétuelle Extra Brut is a carefully orchestrated process. The wine is aged entirely on the lees in 200, 300 and 500 litre barrels, and clarified by natural decanting, without filtration or fining. This method preserves the integrity and purity of the wine's flavour. Production is limited to around 2,000 75cl bottles per vintage. A distinctive feature is the use of a Reserva Perpetua since 2013, which helps to maintain a consistent and balanced style despite annual variations, with a renewal ratio varying between 50 and 30% depending on the plot.
Taste
Dehours Maisoncelle Réserve Perpétuelle Extra Brut is characterised by its complexity and depth on the palate. It presents deep aromas of yellow fruit, combined with toasted and brioche notes. On the palate, it is taut, with a remarkable saline minerality and floral nuances. Vegetal notes intertwine with high acidity, creating a vibrant and refreshing taste experience. The finish is long and lingering, leaving a lasting and pleasurable impression. This champagne is ideal to be served in a large white wine glass at a minimum temperature of 10°C, and can be decanted to further enhance its qualities.
