Skin contact for 6 days. Fermented with indigenous yeasts in stainless steel tanks for 5 months. Bottled with addition of grape must and natural fermentation in bottle for 3 months before disgorgement. Bottled without fining, filtration or added SO2.
Description
The story behind this wine is equally fascinating. Ernesto Cattel, founder of the Costadilà winery, started his project in 2006 with the aim of producing re-fermented wines in the Prosecco homeland, but following non-conformist winemaking methods. The Costadilà 330 slm wine is the essence and tradition of the Prosecco territory. Produced on the hills of Vittorio Veneto at an altitude of 330 metres, this wine is made from the Glera grape variety, grown on clay soils mixed with pebbles. The average age of the vineyard is 15 years and an average production of 10,000 kg per hectare.
Winemaking
Vinification is carried out by direct pressing, followed by spontaneous fermentation with indigenous yeasts without maceration. The wine undergoes a second fermentation in the bottle with the addition of must. This traditional technique, together with a five-month ageing in steel, results in a pale yellow wine with greenish reflections and a very fine bubble.
Taste
Costadilà 330 slm is a prosseco for its fresh and dynamic taste. On the nose, it offers a floral bouquet accompanied by fresh fruit, balsamic tones and iodised notes. Its flavour is complemented by aromas of apple, pear, white flowers, light baking notes and bitter almond.
