The alter ego of Boréal is the NV Brut Nature Les Semblables (Austral), derived from south-facing vineyards and, in this case, from the 2019 vintage. Delivering aromas of pear, crisp stone fruit, clear honey and freshly baked bread, it's medium to full-bodied, broad and pillowy, with a richer, more vinous personality and a long, saline finish. Of course, as I remarked to Doussot, the two alter egos would surely make an extremely complementary blend, even if that would fly in the face of the maison's Burgundian philosophy.

Description
Clandestin Les Semblables Austral Brut Nature comes from the Champagne region in the south of France, specifically from the area known as Côte des Bar. This area, although less known compared to the famous Reims and Epernay regions, is rapidly gaining recognition for its unique and high quality champagnes. Unlike the big champagne houses, the Aube region prides itself on producing smaller but exquisite quantities of champagne.
Benoit Doussot is leading one of the most exciting projects in this region with his Clandestin initiative. Located in the village of Buxieres sur Arce, Aube, Clandestin has captured the essence of the region in his champagne Les Semblables Austral. What is particularly intriguing is that this champagne is made on the same plot as its counterpart, Les Semblables Boréal. Although they share the same soil and grape variety, the only difference is their exposure to the sun. This difference in sun exposure results in two champagnes with different flavour profiles.
Winemaking
Clandestin Les Semblables Austral Blanc de Noirs is a pure Pinot Noir champagne, originating from vines that are between 20 and 35 years old. These vines are planted on calcareous soils with a Kimmeridgian subsoil, characteristic of the Côte des Bar, and are located at an altitude of 200 metres. During the harvest, the grapes are harvested at optimum ripeness. Then, in the cellar, the clusters are pressed and the wines are vinified and aged in oak barrels. Clandestin's cuvée Austral matures for 24 months in the cellars, allowing it to develop its rich aromatic palette.
Taste
Clandestin Austral Brut Nature Champagne presents itself with a golden colour and fine, lively bubbles. As it approaches the nose, it awakens the olfactory sense with gourmand aromas reminiscent of toast and brioche. As it develops, notes of bergamot, ginger and dried flowers emerge. On the palate, this champagne surprises with a soft, round attack. The bubbles add a refreshing lightness, culminating in a lingering finish with toasty and savoury notes.
