The most chiseled, electric wine in Doussot's range is the NV Brut Nature Les Revers, derived from north-facing holdings higher up the slope. Unwinding in the glass with scents of crisp Anjou pear, citrus oil, smoke, white flowers and oyster shell, it's medium to full-bodied, dense and incisive, with a tangy spine of acidity and a long, penetratingly saline finish.

Winemaking
Made exclusively from Chardonnay grapes, this champagne is 100% Chardonnay, which classifies it as a Blanc de Blancs. These grapes are harvested from a single vineyard located on Kimmeridgian soils, which gives it unique characteristics. It is interesting to note that this champagne is literally the opposite of the Cuvée Les Grandes Lignes, although it comes from the same plot, as the grapes of Les Grandes Lignes benefit from a southern exposure. The end result is a sparkling wine with no final dosage, which classifies it as a Brut Nature.
Taste
Les Revers is fresh and intense, typical characteristics of a Champagne Blanc de Blancs. Its taste is the reflection of the collaboration between Bertrand Gautherot of Vouette & Sorbée and Benoît Doussot, a young and energetic bourgeois. Both have vast experience with Pinot Noir, but with this champagne they have decided to highlight the characteristics of Chardonnay. The word "Clandestin" means clandestine, hidden or secret, and refers to the source of these champagnes: plots of west-facing vineyards located in cooler soils. All these vineyards are certified by Ecocert and are made according to rigorous standards.
