Description
Camille et Mathieu Apffel Pandaemonium is a novel proposal born directly from the new vineyards of Camille and Mathieu Apffel's domaine. This wine, from the Savoie region, is a pure expression of the 100% Jacquère variety. This variety is grown on the slopes of Mont Granier, located at the foot of the Chartreuse massif. What makes this terroir special is its history: it is a chaotic soil composed of limestone rock and clay, which was deposited after the collapse of Mont Granier in 1248.
Elaboration
The production of this dry white wine is faithful to the Apffel style, standing out for its great purity. Its finish is chalky, with a notable salinity, all presented with sublime simplicity. As for its production and ageing, the wine has been fermented and aged 90% in stainless steel tanks and 10% in used oak barrels. It should not be forgotten that the wine has not been filtered and that it is currently in its first year of conversion to organic agriculture.
